Here is the recipe: Brown Nut Scones. 2 breakfast cups brown flour 4 level teaspoons baking powder J- teaspoon salt 1 tablespoon brown sugar 3 tablespoons chopped walnuts 2 tablespoons melted butter 1 breakfast cup milk Put all the ingredients into a basin. Melt the butter; put half the milk with it and make a well in the flour and pour in the liquid. Mix quickly; turn out shape and cut. Put on a cold oven tray and bake ten minutes in the gas oven at 9 —electric at 450 deg. top off, bottom low.' Bran and apple shortcake makes a nice change for those kiddies who take their lunch to school every day. It can also be made with a savoury filling of minced meat grated onion and potato and a little seasoning. Bran and Apple Shortcake. 1 cup flour ■1 cup bran 3 tablespoons butter (level) . 1 teaspoon baking powder . Pinch of salt 1 cup of water Apples Dates Rub the butter into the flour and bran; add the baking powder and salt. Mix with cold water. Turn on a board and cut into two; roll out into two oblong pieces. Spread on with sliced apple and dates and a little sugar. Cover with other piece, glaze with a little beaten egg and lightly sprinkle with sugar. Bake about 20 minutes in a fairly hot oven. Bran Muffins. 1 breakfast cup flour 2 breakfast cups bran ■ 1 breakfast cups golden syrup ' 1 breakfast cup milk Good pinch of salt I teaspoon baking powder J teaspoon soda Dissolve soda in some of the milk. Mix all ingredients together. Bake in greased patty tins half-hour in a moderate oven. Pears and Rice. 5 stewed pears » 4oz rice 2oz castor sugar loz butter 11 pints milk 2 eggs Grated rind of half a lemon Salt, vanilla essence Cook rice with milk, sugar, lemon rind and butter and salt, stir in the egg yelks and cook gently, but do not boil. Press into a flat, round mould and invert on a hot dish. Strain the pear syrup, add the vanilla. boil until considerably reduced. Put in the pears and allow to heat. Arrange in a pyramid on top of the rice! pour over the syrup. Cover with meringue made from the stiffly beaten egg whites and four tablespoons sugar. Eake to set the meringue. Oat Cake. G level tablespoons flour 8 level tablespoons oatmeal .1 level teaspoon salt i tablespoon butter ,| level teaspoon soda 13rd breakfast cup boiling water Put dry ingredients into a basin. Dissolve butter in water, mix quickly into a stiff paste. Use oatmeal cn board and roll to a thin round. Cut into eight pieces. Bake in a slow oven until quite firm.
