Sift 12oz plain flour, 2oz cornflour, and a good pinch salt together. Rub in 3oz butter and mix with enough cold water to form a soft dough. Roll out thinly, stamp out into rounds, prick with a fork, and bake in moderate oven for about 10 minutes. Store in airtight tins. Apple Snowballs. Well wash 2 cups rice and pour on 2 cups boiling water and bring to boiling point. Add 2 cups milk and the thinly peeled rind of 1 lemon, good pinch salt and 2 tablespoons sugar. Cook until rice is tender and moisture absorbed. ■ In the meantime, peel and core 6 medium cooking apples and fill centre with raisins or dates. Divide rice into as many portions as apples, press out carefully, then place a prepared apple on each and fold rice over apple, completely covering it. Tie in separate pieces buttered paper, then cloth, and boil lor 14 hours. Turn out carefully and servo with cream or melted butter and sugar. Butter Scrolls. Cream Goz butter well, gradually add 2oz icing sugar, vanilla to taste, and 6oz sifted flour. Beat well until soft and creamy. Put mixture into a forcing tube with rose pipe attached and force out mixture in the shape of scrolls. Allow a space between each scroll, as they spread a little. Allow them to stand in a cool place to harden, then bake in a hot oven for a few minutes. Date Cake. Place in a saucepan Boz butter. Boz brown sugar. 11b dates, and 4 pint warm water. Bring slowly to boil and simmer for about 5 minutes, stirring all the time to prevent burning. Allow to become quite cold, then add 12oz plain flour, sifted with 4 level teaspoon ground cinnamon, 4 teaspoon mixed spice, and a good pinch salt. Add 4oz shelled walnuts and 1 teaspoon bicarbonate of soda, dissolved in 1 tablespoon boiling water and pint warm milk. Mix well together and bake in a well greased and floured oblong cake-tin in a moderate oven for about 24 hours. Allow to become quite cold, ice with lemon icing, and sprinkle with chopped walnuts.
