FOR LUNCHEON
0 TOMATO BRAWN. Cook tomatoes with as little water as possible and a pinch of bicarbonate of soda. Rub through a sieve and measure 2 cups. Soak 2 level tablespoons gelatine in 3-cup cold water, then dissolve in hot tomato puree. Add salt, pepper, and a little ground mace to flavour tomato, then stand it aside until beginning to set. In the meantime have ready two cups chopped cold meat, 3 chopped hard-boiled eggs, -J-cup chopped ham, 1 teaspoon grated onion, |- cup cooked peas, and |-cup chopped celery (uncooked). Place into an oblong mould and allow to set until firm. Turn out and serve and cut into slices.
