FOR SUNDAY’S SUPPER

APPLE CREAM. Peel and slice 6 large apples and stew them with J cup water, the grated rind and juice of 1 lemon. When quite soft, add 1 cup sugar and rub through a sieve. There should be 1 pint of mixture. If not quite enough, add a little cold water. Soak Joz gelatine in ,j cup cold water and dissolve over a low gas. Add to apple mixture. Chop 3oz preserved ginger into small pieces, and when apple is almost set add it with 1 tablespoon syrup. Beat 2 egg-whites until stiff, also i pint cream. Fold into mixture and allow to, Turn out and serve with fruit.
