BAKED HADDOCK WITH RICE
DISH FOR FRIDAY’S LUNCH. Well grease an ovenproof dish and place a layer of boiled rice in the bottom. Cover .with a layer of grated cheese, then a layer of chopped haddock. Sprinkle with pepper and lemon juice. Continue until mould is almost full. Add enough milk to come about half-way to the lop of rice, cover’ with breadcrumbs, dot with butter, and bake in a moderate oven for about 25 minutes.
