THESE ARE WORTH TRYING. These dishes are worth trying:— Boiled Fish Balls. Place 11b fillets or any fish free from bones through a fine mincer. Add 3 unbeaten egg-whites by degrees, then J cup top milk, pepper, salt, grated rind of 1 lemon, 1 dessertspoon chopped parsley, a little cayenne. Butter a tablespoon, shape mixture in the spoon, then slip another buttered tablesptoon underneath and drop in boiling fish stock or water. Simmer for 10 minutes. Drain and then arrange in a fireproof dish. Pour over a well-seasoned white sauce, sprinkle with finely-grated cheese, and bake in a hot oven for about 10 minutes. Pumpkin Fritters. Put some cooked and very dry pumpkin through a sieve and measure 2 cups. Add salt and pepper to taste, 1 level teaspoon sugar, 1 dessertspoon mushroom ketchup, 2 level tablespoons melted butter, 1 beaten egg, 1 tablespoon chopped ham, 1 teaspoon chopped parsley, and about 2 tablespoons top milk, according to dryness of pumpkin. Shape into round flat cakes and fry in bacon fat until brown on both sides. Old-Fashioned Pumpkin Pie. Line a tart plate with flaky or shortcrust and fill with the following: Boil a dry pumpkin in salted water to which a few cloves may be added, drain well, rub through a sieve, and measure 2 cups. Add 1 tablespoon butter i cup sugar. 1 tablespoon sherry, 1 level teaspoon grated nutmeg, the grated rind and juice of 1 lemon, or j level teaspoon citric acid and 1 teaspoon essence lemon. Roll cut pastry rather thinly for top, press edges well together, brush over with egg-white or a little milk, and bake in a moderate oven for about 45 minutes.
