FOR SATURDAY’S DINNER
STEAMED BATTER PUDDING. Beat 3 egg-yolks and 3 dessertspoons sugar until very thick, add 1 teaspoon melted butter, a good pinch salt, and 1 teaspoon vanilla essence. Sift loz. plain flour and add it into egg mixture alternately with } cup milk. Beat the egg-whites until stiff and fold into mixture Place in a well-buttered mould or basin and steam until firm for about 1 hour. Turn out very carefully and serve with the following: Place in a saucepan ? cup milk, 4oz. unsweetened chocolate, Boz. sugar or a little less, according to taste, 1 teaspoon butter. Stir over gas until mixture thickens, taking care it does not burn; add 1 teaspoon vanilla and serve hot.
