Fresh or dried fruit. 1/3 cup sugar (more or less accordto the acidity of the fruit A teaspoon cinnamon 1 cup breadcrumbs 2 tablespoons (loz) butter 1/3 cup water or fruit juice Butter a pie dish and place in it a layer of fruit. Fresh or dried fruit may be used, but if dried they should be soaked for forty-eight hours. Sprinkle with a portion of sugar, cinnamon and bread crumbs, then dot with part of the butter. Repeat the layers until the dish is full. If the fruit is uncooked and inclined to be dry, add the water or fruit juice before the last layer. Cover and bake thirty-five ‘ minutes, then remove cover and brown top.

Caramel Lemon Filling for Tart. lib light brown sugar 3 lemons (juice and grated rind) Jib butter 5 eggs, well beaten Mix. all ingredients together and put in a double boiler, stirring till it is as thick as honey. Put into covered jars and seal well. This will keep for six months, and is useful for small tarts. Date Rolls. 4oz butter Boz sugar 2 eggs .} teaspoon vanilla lOoz flour 6oz cornflour 2 teaspoons baking powder Dates Cream the butter and sugar and then add the well beaten eggs. Add vanilla. Sift together the flour, cornflour and baking powder, and then add to the egg mixture. Roll out. Cut into small squares. Place a date in the centre of each and roll up. Bake in a moderate oven (350 deg F) for ten to fifteen minutes. Date Shortcake. 4oz butter 3oz sugar ?i teaspoon vanilla lOoz flour 1 teaspoon baking powder 1 egg Cream the butter. Add sugar and then the egg. Then add the sifted dry ingredients. Place half the dough, when rolled out, into a greased flat tin. Spread on date mixture. Cover with dough, and bake for thirty minutes at 375 deg F. Date Filling.

Rind and juice of 1 lemon Jib chopped dates 1 cup water Cook all together until dates are very soft.
