TRY THIS DISH FOR DINNER
POTATO AND TOMATO FANCIES.
Peel 8 small potatoes of even size. | Cut of! the ends and with an applecorer stamp out the centre. Parboil potatoes, then fry in boiling fat until golden brown. Cook 1 large finelvcliopped onion for a few minutes, add loz. grated cheese. 1 tablespoon fine breadcrumbs, stir over fire for two minutes. then remove from fire and add the yolks of 2 eggs, loz. chopped ham or cold meat, 1 teaspoon chopped parsley, pepper and salt to taste. Fill potatoes with this mixture and keep not. Cut tomatoes in halves and grill a little. Now place a prepared potato on top of tomato, brush over with a little butter, stand them on a greased tin, cover with buttered paper, and cook for about 7 minutes in a hot oven. Dish up on rounds of buttered toast.
