FOR SUNDAY’S SUPPER

BAKED EGG-PLANT. Peel a fairly large egg-plant and cut in halves lengthwise. Parboil for 15 minutes, rounded side up. in boiling salted water. Drain well and scoop out the middle, leaving a wall about an inch thick. Chop the middle finely and add it to Hie following: i cup. chopped ham, 11 cups fine white breadcrumbs. 2 tablespoons minced onion, 1 teaspoon baking powder, 1 tablespoon melted butter, pepper, salt, 2 tablespoons fine-ly-chopped capsicum, and 2 teaspoons fmely-choyjped parsley. Pour over 1 cup boiling milk. Mix well and fill egg-plant, rounding it up on each half. Place in a baking dish with just enough water to prevent egg-plant burning, and bake for 45 minutes.
