APPETISING DISH

FOR MONDAY’S DINNER. This dish can be prepared on Monday morning. Boil 1 cup rice in plenty of boiling salted water or stock until soft. Strain, allow it to cool a little, then line a round cakc-tin previously greased. Mix together 2 cups finelychopped cold meat, 1 tablespoon grated onion. 1 teaspoon finely-chopped green capsicum, 3 teaspoons chopped parsley, 4 cup each fine white breadcrumbs, tomato sauce, and stock or gravy, 2 tablespoons chopped, cooked bacon or ham, pepper and salt to taste, and 2 egg-yolks. Fill prepared tin. packing it well down. Cover with a thick layer of rice, cover with buttered paper, place in a moderate oven in a pan of water, or steam in a saucepan for about 1 hour. Serve with a gravy flavoured with tomato sauce.
