Wash 21b tart cooking apples and cut into slices, place in a pan with l.j points water and simmer until pulp. Strain through a clean tea towel. Place this juice in pan with 41b wellwashed cherries and the juice of 1 large juicy lemon. Bring to boil and cook for about 30 minutes, or until a large part of the moisture from the cherries has evaporated. Now add 3i lb sugar, previously warmed in a slow oven.
