STUFFED BEETROOT

AN ORIGINAL DISH. • Beetroot is also plentiful in most gardens just now. For an original dish, scoop the centres from some whole cooked beetroots and place the shells in diluted vinegar for at least an hour. Drain, and fill with a mixture of corn, green peas and the diced centres of the beet, mixed together with mayonnaise. Serve with tomato slices on lettuce leaves. Another unusual dish consists of freshly cooked beetroot, either diced or sliced, surrounded with white sauce containing slices of hard-boiled egg and an outer ring of crisply cooked silver beet.
