THE DELICIOUS STRAWBERRY
SOME TASTY RECIPES. These are delicious strawberry recipes:— Strawberry Custard. Two eggs, 1 cup milk. 1 tablespoon sugar, strawberries, whipped cream, grated chocolate. Beat eggs and sugar well; add milk; strain into greased fireproof dish. Bake in slow oven till set. Chill, then cover top with whipped flavoured cream, then with strawberries. Sprinkle with shredded chocolate and serve at once. Strawberry Mousse. Possibly this is as good as straw-berries-and-cream. Rub half a pound of strawberries through a hair sieve and mix them with 3oz. of castor sugar and the juice of half an orange. Strain into this loz. of gelatine which has been dissolved in half a teacup of milk, and finally fold in half a pint of whipped cream. Pour into a mould, and keep if possible in the refrigerator or on ice until wanted. Strawberry Whip. This certainly avoids the expense of the cream! Mash up some good strawberries well, and to each egg-white allow a breakfast cup of sugar and the same of the mashed strawberries. Whip the egg-white stiffly with a pinch of salt, and then add gradually first sugar, then mashed strawberries, beating well all the time. Then when all is added, continue beating until the "whip” is light and froth#. Serve very cold in glasses.
Strawberry Delight. 1 packet, jelly (strawberry flavour). 2 cups boiling water. 1 cup fresh strawberries. Dissolve the jelly powder in the boiling water. Pour half of it into a fancy mould. Chill, and when slightly thickened, fold in strawberries. Pour in the remaining jelly and chill until firm. Unmould and serve with slightly sweetened whipped cream. Any seasonable fruit can be substituted for the strawberries and combined with jelly of a suitable flavour.
Strawberry Sandwich. Raspberries are equally good for this delicious cake. Required: 11b. strawberries, sugar to taste, Jib Devonshire cream (ordinary whipped cream can be used), a sponge sandwich. The sponge sandwich should be quite fresh; split it, then beat the fruit with sugar to taste, and add the clotted cream. Spread a good layer of this mixture on the lower half of sandwich, then replace top. Sift icing sugar over. • Marshmallow Biscuits. Quarter-pound butter, Jib. sugar, 1 egg, lib. flour, 1 teaspon baking powder. Cream, butter and sugar, add egg. and beat well. Stir in flour sifted with baking powder. Roll mixture into balls about the size of walnuts. Flatten
them a little, and bake in a moderate oven until brown. Marshmallow: One large cup sugar, 1 small cup water, 1 tablespoon powdered gelatine, strawberry juice or essence to flavour. Boil sugar, gelatine and water together for twenty minutes. Take off stove. Whisk until thick and white. Add flavouring. Pour a little oT this mixture on each biscuit. When cold, ice with chocolate icing and top each with a walnut.
Strawberry Batter Pudding. One cup mashed strawberries, 1 cup sugar, II cups self-raising flour, 2 eggs, 1 cup milk, 1 tablespoon melted butter. Sauce: 1 tablespoon butter, 4 tablespoons icing sugar, J cup mashed strawberries. Mix the cup of strawberries with sugar and allow to stand half an hour. Make a batter with beaten eggs, flour, milk and butter. Half-fill well-greased mould or small moulds with batter, spread with strawberry mixture, then the rest of the batter. Cover with greased paper and steam 30 to 60 minutes, according to size of mould. Serve with strawberry sauce.
