SMOKED OYSTERS
A NEW DELICACY. As a result of researches carried on Iby the Canadian Fisheries Research Board, a new delicacy will soon be made available to epicurse of Canada and other countries. The new delicacy consists of oysters which are smoked a light brown colour and thereby given a fine smoked flavour. The smoked oysters are canned with a small quantity of salad oil. The test samples have been found very satisfactory, and it is expected that a new industry will result. At present the greatest, part o.f the Canadian Dominion's oyster catch is marketed fresh.
