SOMETHING WORTH WHILE. These chocolate recipes are well worth trying: — Cold Chocolate Souffle Ingredients: 1 gill milk, 3 eggs, loz gelatine, 11-oz castor sugar, 1 gill water, vanilla, 2oz grated chocolate. Method: Beat the egg yolks in a basin, boil the milk, pour these into a saucepan and stir over gentle heat until thick. Add the sugar and vanilla and put aside to cool. Dissolve the chocolate and gelatine in the water and when cool stir into the custard. When it is just beginning to thicken round the sides of the basin stir in the well-beaten egg whites and pour into a mould. Chocolate Macaroons Ingredients: 2 egg whites. 4oz ground almonds, 4oz castor sugar, Soz ground rice, I teaspoonful vanilla, essence, loz grated chocolate. Method: Beat the egg whites stiffly and add gradually the dry ingredients. Make the mixture into small ball£ and place in a flat tin covered with buttered paper. Decorate each with an almond or glace cherry. Bake in a slow oven until firm and cooked through.
