,AN ENGLISH RECIPE. i

The following recipe is from an English home-made cakeshop, where the Bath buns are sold at lid each. Take Ulb flour, 1 gill sour milk, 7 oz white sugar, 2 eggs, 1 grated lemon rind, IJoz yeast, 4oz sultanas, 2oz candied peel, 2oz butter. Rub butter into flour very roughly. Cream the yeast in a cup with a little of the sugar, warm the milk slightly, and add to the yeast. Pour this into the flour, add the eggs, well whisked, and mix all together. Stand in a warm place to rise for li hours. Put in the sugar, grated lemon rind, sultanas, and chopped peel. Form into buns. Put them on a greased baking tin, sprinkle coarse bun sugar on top, stand the tin over a basin of boiling water, and allow the buns to prove for five minutes. Bake in a quick oven —450 deg. lowered to medium —from 20-25 minutes. This recipe makes two dozen good-sized buns.
