Stand in a warm place to rise for li hours. Put in the sugar, grated lemon rind, sultanas, and chopped peel. Form into buns. Put them on a greased baking tin, sprinkle coarse bun sugar on top, stand the tin over a basin of boiling water, and allow the buns to prove for five minutes.
