FRY PROPERLY
TWO IMPORTANT POINTS. There is a belief that the frying-pan is an enemy to digestion, but the point is to fry properly. Two important points are that the fat (just sufficient to cover the bottom of the pan) should be quite hot before the meat is put in, and that after frequent turning the' meat should be served at once.
