SOMETHING FOR TEA.

Required: Three-quarters of a jiound of flour, loz ’ of butter, |oz of compressed yeast, 1 gill and a-half of milk, | a teaspoon of castor sugar, J a teaspoon of salt, and I egg. Sieve together the flour and salt and rub in the butter. Stir the sugar and yeast till liquid, add to them the milk (which should be tepid), then'add the beaten egg. Make a hole in the middle of the flour, strain in the yeast, etc, and mix to a soft dough. Knead lightly on a floured board. Well butter two round tins, divide the dough into two cakes, drop one in each tin. Cover the tops with paper, and put in a warm place for the dough to rise and fill the tins (about an hour). Then bake in a sharp oven for half an hour. Turn out of tins, brush the tops with a little warm- 1 ed milk and butter, and lea've on a sieve till cold.
