PEANUTS
SOME DAINTY RECIPES. Sandwich Filling. ' One cupful of milk or water, 1 tablespoonful of flour, 1 tablespoonful water, 1 egg, 1 teaspoonful salt, 1 tablespoonful of sugar, 1 tablespoonful butter or other fat, J- cupful of vinegar, red pepper, 2 cupfuls of roasted peanuts, ground fine. ' Heat the milk, and while it is heating mix the flour with the water and add eggs, salt and sugar. To this mixture add the heated milk. Cook five minutes, stirring constantly. Then add butter, vinegar and ground peanuts.
Peanut Salad with Bananas. Slice bananas through the centre, spread out on lettuce leaves and sprinkle liberally, with chopped peanuts. Serve ,wifh mayonnaise ' or plain salad dressing.
Peanut Fondu. One cupful of finely-ground peanuts, 1 cupful dried breadcrumbs, 1 egg, 13 cupfuls milk, teaspoonfuls salt, dash of paprika. Grind the peanuts fine. Mix all the ingredients except the white of egg. Beat egg-white very stiff and fold in. Bake in a buttered baking dish for 30 to 40 minutes in a moderate oven.
Peanut Muffins. Three-quarters of a cup cornmeal, 11 cupfuls rye flour, 1 cupful finelyground peanuts, 1 egg, 1 teaspoonful salt, cupfuls of milk, 4 teaspoonfuls baking powder. Add liquids to, dry ingredients and mix well. Bake in well-greased muffin pans. . Peanut Loaf.
One cupful chopped peanuts, 2 cupfuls breadcrumbs, 2 tablespoonfuls melted fat, 1 egg, i teaspoonful salt, J teaspoonful pepper, i to ij cupful of milk.
Mix, using enough milk to make a moist loaf. Put in buttered pan and bake an hour in a moderate • oven, keeping covered the first half hour. Baste once or twice with melted fat. Turn into a hot platter and sprinkle with chopped peanuts.
Peanut Brownies. Half a cupful of corn syrup, -2 tablespoonfuls strained honey, 1 square chocolate, 2 cupful buckwheat flour, 1 teaspoonful baking powder, 1 cupful chopped peanuts, J teaspoonful salt, 1 teaspoonful vanilla. Melt the chocolate and mix with the corn syrup and honey. To this add 1 teaspoonful of vanilla and the dry ingredients—flour, baking powder, salt and nuts. Mix well and pour by the spoonful on greased pan. Bake in a moderate oven.
