Cream the butter and sugar; mix in the flour and three eggs, well beaten. Beat till soft and creamy, add baking powder, essence, almonds and cherries. Place in deep greased patty pans and bake 15 minutes. TENNIS BISCUITS. 6oz. butter; 2|oz. icing sugar; quarter teaspoon Cloudy Vanilla Food Flavouring; quarter teaspoon Cloudy Almond Food Flavouring; Goz. flour; 2oz. cornflour; loz. angelica; 2oz. cherries loz. peel; loz. almonds. Cream butter and sugar; add essences; add dry ingredients mixed with finely chopped fruit. Roll into small balls and place a piece of chery on each biscuit. Bake 15 minutes. Regulo, No. 4. PRINCESS FINGERS. 4oz. butter; 3oz. sugar; 2 eggs; halfteaspoon Cloudy Vanilla Food Flavouring; Boz. flour; 1 teaspoon baking powder; raspberry jam; 2oz. chopped cherries 2oz. chopped walnuts. Cream butter and sugar; add essence and egg yolks, then flour and baking powder. Roll out. Spread with raspbery jam and sprinkle over chopped cherries and walnuts. Cover with meringue. Meringue.—Beat 2 egg whites until, stiff; add half-cup sugar; half-cup coconut; 1 cup rice bubbles; half-teaspoon Cloudy Orange Food Flavouring. Bake 1 hour in a slow oven. '< PRINCESS'FUDGE. lib. sugar;, half-cup water; 1 small tin of. sweetened condensed milk; ljoz. butter; half-teaspoon Cloudy Vanilla i Food Flavouring. Put all ingredients, except essence, into a saucepan and boil for 40 minutes without stirring. Take off gas and add essence. Beat until thick and pour on to a 5 buttered plate and leave until set.
