CRUMPETS
HOW TO MAKE THEM. For this recipe for making crumpets, the ingredients are lib flour, 1 teaspoon baking soda, 2 teaspoons cream of tartar, 1 dessertspoon of sugar, 1 cup of milk, the whites of 2 eggs, } teaspoon salt. Sift flour, soda, cream of. tartar and salt, add sugar, then mix to a creamy batter with the milk. Stir in the stiffly-beaten whites of eggs; let it stand for 5 minutes; then grease a girdle or frying-pan, and put in four tablespoons of batter. Turn when the bubbles in the batter burst and brown slightly. Spread with plenty of butter when toasted, and serve very hot. These can be cooked on an open fire or on a range.
