BEETROOT WINE

A TESTED RECIPE. Pare and slice a good supply of beetroot, place in a tub and crush to pulp with a heavy piece of wood. Strain off the rest of the juice by placing the pulp suspended in a stout cloth over the tub. Add 31b of sugar to each gallon of juice, also J pint of brandy to each gallon. Place in a cask, leaving open as long as the liquor shows signs of action. Then close it tightly for three months before using.
