FURTHER HERDS REQUIRED SCOTTISH EXPERIENCE. In January and February the Scottish Milk Marketing Board's 4,100.000 consumers each took two points of milk more than in the corresponding two months of last year.. The Board, reviewing liquid consumption over the past three years, state that public demand has increased during that period by 500.000 gallons a month, equal to 12 per cent. While attributing the increased consumption to recovery in industry giving the public more money to spend, the Board think that their advertising campaign (the first on a large scale attempted in Scotland) has been a valuable factor. What does the increased demand for liquid milk mean in scope for dairyfarming expansion? On the figures of the Scottish Board for last year, compared with two years ago, it is equal to the output of 7,000 extra cows. This cow-stock in turn’ would represent 250 extra dairy farms. Although the milk is “found” from the cheese vat. the extra demand represents expansion of dairying sooner or later on the scale noted. The Scottish Milk Board pride themselves upon their manufacturing resources. At their inception, the Board took over a large chain of creameries. Today, they claim to be earning a net income of £50,000 from milk residues alone, this revenue being derived from the fullest utilisation possible of skim milk and whey. There is a range of half a dozen products from skim milk, while from whey a butter is being extracted and the second residue is turned into an edible powder.
