THE HOUSEWIFE’S NOTEBOOK
f HINTS ABOUT THE HOME. To strengthen the voice, add the beaten white of an egg to the juice of a lemon. Sweeten with a little sugar, and take a dose when the voice is weak or hoarse. The following tests may be found useful for determining the heat of the oven: If a sheet of writing paper burns whenever it is put in, the oven is too hot; if the paper becomes dark brown, it is suitable for pastry, scones, muffins, little dinner loaves, etc.; if light brown, it does for buns and small cakes, pies, and tarts; if dark yellow, for cakes;- if light yellow, for biscuits, puddings, etc. Heatproof glass ovenware is excellent for cake-baking. No greased paper - lining is needed, as the glassware is thick enough to prevent burning, and, being transparent, it allows the progress of the baking to be seen. To preserve linoleum, rub it over occasionally with equal parts of kerosent and olive oil. Stem vegetables should be cooked quickly, and root vegetables the reverse. A teaspoonful of lemon juice put into the water in which rice is boiling will make it white and keep the grains separate. Use loz of gelatine to 1 quart of liquid for making jellies.
