SUPPER DISHES
SOME APPETISING DAINTIES. Some appetising supper dishes are: Cocktail Saveloys with Tomato Sauce and Bread and Butter. The tiny saveloys are, of course, speared with a toothpick or sharpened match, and dipped in a community saucer of sauce. (They have been heated thoroughly, then separated with scissors.) Sandwiches—Egg and Mint; Banana. Raspberry Shortbread. For the egg sandwiches, hard-boil the eggs, shell them, and mash them with a fork ■ while they are still hot. Blend to a paste with a walnut of butter, and add pepper and salt and finely chopped young mint leaves. Banana sandwiches must be quite freshly made. Mash the fruit with a fork, sprinkle it with a little sugar and lemon juice, and use as filling. Devilled Sardines on Fingers of Toast. Mash the sardines from as many tins as you require with a fork, adding 2 ozs of butter. Sprinkle lightly with cayenne pepper and lemon juice. This can be heaped, cold, on fingers of fairy bread or on plain biscuits, or it can be heated in a small saucepan and eaten on hot buttered toast. Sandwiches — Marmite and Lettuce; Peach. The sandwiches are easily prepared. Brown bread, buttered, smeared with marmite (or similar preparation) and covered with shredded lettuce being one, and ripe peach flesh broken up or thinly sliced forming the filling of the other. As with other fruits, peacli sandwiches must not be allowed to stand, as the fruit browns. Raspberry Shortbread. First, make the shortbread by beating I cup of sugar with £ lb butter, adding 1 egg, sifting in 1J small cups of self-raising flour to which a pinch of salt has been added and spreading it in a greased swiss-roll tin or similar utensil. Cover the top liberally with raspberry jam, and over that spread evenly a mixture made of 1 egg, 1 cup of cocoanut and 1J cups sugar. Bake it for 30 to 40 minutes tn a moderate oven. Cold Roast Rabbit, Lettuce, and Bread and Butter. Roast the rabbit in a casserole or with one dish upturned over another to keep it moist, and when cold cut into neat manageable pieces. Cut the seasoning into slices. All that is necessary then is to select your bits, roll them in a lettuce leaf and eat them. ) Sandwiches —Sultana; Brown Bread and Date. The sandwiches are simple. Sultanas sprinkled with lemon juice make one filling, and chopped dates sprinkled with cinnamon the other. Sandwiches —Tomato and Mayonnaise; Apple and Nut. For the sandwiches, piquancy is added to the tomato by the addition of a very little mayonnaise left over from a salad. Apple sandwiches must be made at the last minute, slices of crisp apple and a sprinkling of chopped walnut being the filling.
