Tuna Roses.
Peel four small tomatoes, quarter, but do not cut through the bottom skin. Place on salad plates, force petals open. In centre of each place a quarter of a cupful of flaked tuna fish. Chill. Mix three tablespoonfuls of mayonnaise, two tablespoonfuls chopped cucumber, and one tablespoonful pickle relish. Top tuna fish with a spoonful of this mixture. Sprinkle with paprika, and serve decorated with lettuce.
