GIPSY STEW
AN APPETISING DISH. Amout this time of the year oftentimes there comes a lull, when imagination in the kitchen seems at a low ebb. Right at this domestic juncture, to the rescue drifts in Gipsy Stew. Now it stands to reason and romance that no true gipsy ever consulted a cookery book to make a stew! Because Gipsy Stew is a bit of this and a bit of that. A rabbit here, or a checken there. Maybe a piece of fresh chicken there. Maybe a piece of fresh Perhaps a hare jumped into the pot, or a brace of unsuspecting ducks, or grouse. Even a little pork. Indeed, Gipsy Stew does not confine itself to any one particular meat, but like the gipsy, is adaptable to any and all circumstances.
To prepare Gipsy Stew let your thought follow the Romany Road. Then when you return to the home pastures, with what you have gathered for the pot, give your gipsy band a happy surprise. Let it be Gipsy Stew.
However, if you are inclined to be reluctant about taking to the trail alone, follow my pattern until you are able to make your own. lib. round steak, with flour well pounded in. 3 or 4 lambs' kidneys. 1 medium-sized slice of ham, about
3-8 inch thick. Onions, leeks, carrots, turnips, peas, and/or parsnips at your discretion. Salt, pepper, bay leaf, and a daring dash of ginger. After browning the round steak in an iron frying pan, or suitable pot, cut in the onions,, or leeks. Then put in the ham, cut in suitable pieces, or uncut; and the kidneys, cut small, or in halves. Over this pour sufficient warm water to cover. Allow to simmer gently in closed container while you prepare the other vegetables which you intend to include. Add seasoning, then allow the pot to simmer or stew, until the vegetables are tender. Other delightful combinations are: 11b. veal. 1. calf, or beef kidney. 1 slice ham or 1 stewing hen, or rooster. lib. veal. 1 slice ham or 1 rabbit 3 lambs’ kidneys. 1 slice ham. There are no hidebound rules about concocting Gipsy Stew, except that you maintain a gipsy nonchalance. This notion may be fostered by wrapping a gay handkerchief about your head and occasionally banging together two tin pan lids. Let your fancy have free rein, but do be sure to let a little pig run through the stew, as he does add a piquancy to the pot which will be highly appreciated by your gipsy band.
