EAT IN HAPPINESS

SOME OLD FAVOURITE DISHES. Fruit Dishes. These are old favourites that find a warm welcome when served foi luncheon or dinner. Surely, nothing could be more agreeable than oldfashioned Apple Betty and Apple Snow when served with cream or custard sauce.

A Word of Advice: Until you are confident that you have progressed beyond the elementary stage in cookery, let us again advise you not to venture upon projects that might tax your ability to carry them to a satisfactory conclusion. It is possible to express simplicity and refinement in the preparation of an Apple Betty or a custard, as well as in the serving of a Souffle.

Cooking that is done with love and assurance must comfort those who partake of it. One of the retiring presidents of the American Home Economics Association said in a recent address: “It’s more important that a child eat in happiness than that he have his full quota of orange juice.” This applies not only to the child but to adults also; as they, too, respond to the thought around them. There is absolutely nothing monotonous about perfect cookery, and where there is simplicity and beauty there is no drudgery. Peel and grate apples. Cover at once with enough sugar to sweeten to taste. Beat whites of eggs in a large bowl until very stiff; add confectionery sugar, salt and lemon juice. Then slowly add the grated apple pulp to the egg whites; beat until >very stiff with a large flat wire egg beater. Place apple snow in individual glass dishes and pour some ice cold custard sauce over it and top each dish with whipped cream. (Serves 10).

Note: This dessert is delicious made with apricots instead of grated apples. Soak dried apricots for several hours, cook and sweeten to taste. Drain thoroughly and put through a sieve. Use i cup pulp and J teaspoon lemon, juice to 3 egg whites. Prune pulp may also be used. In this case the lemon juice is omitted. Old Fashioned Bread Pudding 3 cups fresh bread cubes (free from crust) 2 eggs 3 cups milk l-3rd cup sugar 1 teaspoon vanilla J teaspoon salt l-3rd cup raisins Speck nutmeg 3 tablespoons melted butter Place bread cubes in baking dish. Sprinkle melted butter on the bread and add the raisins. Beat eggs slightly, add milk and rest of ingredients and pour over bread. Place pan in container of boiling water and bake in moderate oven 45 minutes. (375 deg. F.) Serve with cream. Apple Betty 2 cups bread crumbs (from centre of loaf) J cup melted butter 2 cups tart apples (sliced very thin) 4 cup sugar 3 tablespoons cold water 2 tablespoons lemon juice l-3rd cup chopped almonds .1 teaspoon salt J teaspoon grated nutmeg Mix bread crumbs with melted butter; cover buttered baking dish with l-3rd of the crumbs, then add a layer of apples and 4 of the other ingredients and then crumbs. There should be two layers of apples and three of crumbs. Add the cold water. Bake for 50 minutes in moderate oven. (375 deg F). Serve with hard sauce or cream. Apple or Peach Cobbler 4 cups peaches or apples 11 cups sugar 11 cups water 2 tablespoons butter 1 egg 4 cup milk 1 cup flour :} teaspoon salt 2 teaspoons baking powder Peel apples or peaches; cut the fruit in medium size pieces and cover with 1 cup sugar and the water. Bake in covered shallow baking dish until fruit is partly tender. Cream butter, add cup sugar, the well beaten egg and the milk. Last add the dry ingredients sifted together. Mix thoroughly. Pour over hot fruit in the baking dish. Bake 25 minutes in quick oven. (400 deg F). Serve with cream.

Hot Fudge Pudding J cup sugar l-3rd cup butter 1 egg ' x . J cup milk 2 teaspoons baking powder 2 squares chocolate i cup pastry flour I teaspoon vanilla Cream butter thoroughly and slowly add sugar, and the beaten egg, milk, and mix well. Add flour and baking powder which have been sifted together. Last, add vanilla and melted chocolate. Place in buttered baking dish and bake in moderate oven 35 minutes. (375 deg F). Serve hot or cold with Cold Foamy Sauce.
