DAIRY COMMISSIONER’S STATEMENT, When speaking of factory butter generally, Mr D. Cuddie, the Dairy Commissioner, said recently that some exhibitors lost points through an excessive use of preservatives and consequent deterioration in flavour. Not more than one-half per cent, of preservative material should be used, and many factory managers had found that the pasteurisation system obviated the use of any preserving materials, their experience being that butter to which no preservative had been added maintained its quality perfectly.
