CHEESE AND COLD STORAGE.
AMERICAN EXPERIMENTS
It is rather commonly believed that cold is harmful to the ripening of. cheese, causing a bitter tasts. Experiments in America, however, lead experts there to contend that a judicious application of cold may improve the flavour. Moreover, they say, cold may prevent certain changes due to bacterial action, such as "eyes" in Swiss cheese, the characteristic taste of Limburg cheese, and mouldiness in Roquefort. "When these changes occur, the best way of preserving the cheese from further harm is to store in a refrigerator.
