BULLOCKS FOR WE LONDON MARKET.

A SATISFAeTimy bsport.

At the la<>t Auckland Bh'ow a I'Hipfei o pries was offered by the Shaw, SiVill, an 1 Albion Company, bliro >ph their IPCftl a«auts (Messrs J.,D. ; NaMiHU and C 0.,) for the boat pon of two bullocks suitable for the London market, These exhibits ware frozen, Bh'pped Homo by the steamer Matatua, and judged in London. T!»4 mr,na£jflr of the Auckland Freezing Qompay had ji?«t rpaeiwd a report stating tho d/staqd *co<ind prions were rewarded to Mr Richard Reynolds of Cambridge, Mr % Allan, being-, placed third, Thofollowintr details about tho quality of fchoaHfpWeWift'e'ftlso given !-" l'opovton Show R«ef pur Rfiitatua :YVn had these various lots of herf up to Smithtield on Thursday last. They wore exhibited in a prominoun position in the marltnt, and viewed by a lurse number ot batchers and salesmen, Mr H. Rawson (of Messrs Brews tor and Frost), along with ourselves-, carefully examined overy quarter, in order to ascertain the merits of tho respective rarscls from the standpoint of the requirements of the London market. Uur task of judging the consignment was rendered an extreme y difficult one, owing to the excellent quality of each lot. Indeed, the shipment comprised some of the finest quarter* of he-f we have ever seen from New Zealand, and, if such quality (but of rather average weight) is available in any quanity, Auokland beef wM soon establish a reputation far itself sopontj to none in New Zealand. The only drawback was that, in almost every inst.mpe, the quarters were too heavy, »nd iiieline.d to (jo hc|wut: f : ully fat, bcina n ore suitable for-tlio Christmi'H marko* i.liah for tho ordinary all the your, round trade s r Smithflold. In this report we place the marks in the order of their suitability for this market: R. Reynolds (flag K) —Four fores (3031 b), four hinds (2001 b) : A parcel of prime, well bred beef, most excellent in overy way. One bullock was slightly superior to the otner, but both left nothing, to be desired in the matter of qurdity. The quarters were short and square, well oovered, well finished, and full of excellent meat. Tho judges awarded the first prize to this lot. R. Reynolds (flan Z) —Pour fores (1951 b), four hinds (1901 b) : A level lot of primo heef, whioh was only very slightly inferior to the K mark .in point ot quality, and was considered a good second. The quarters were nicely topped up, and particularly good in the loins and buttocks, E. Allen (flag N)—Four fores (2551 b), four hinds (2421 b) : These animals must have looked very fine indeed before slaughter, but the carcases were much too fat and wasteful to constitute really prime butcher's meat, and on that account the parcel could ouly be placed third in order of merit. YV. McLaughlin (flag L) —Four fores (2251 b), four hinds (2191 b); Good, useful beef, though not particularly prime, some of tho quarters being comparatively thin in the legs, and "patchy" iafc on tho loins, Ihe beef, though heavy, required a little moro finish. J. Fisher (flag J)—Four fores (23Slb), four hinds (2431 b) : A line of well-bred and thoroughly good-conditioned beef, which would be very salcab e at Christmas time, but would, as a rule be considered much too fat for the best class of trade. New Zealand Land Association (flag Y)—Four fores (20611.), one hind (2441 b): In this ease due allowance was made for their being only one hindquarter. Kxcossive fatness completely spoiled this parcel, which was even more wasteful than any of the others. The averago weight was quite 301 b to 401 b too large. (Signed) H.. Rawson. Gordon Campbell. Loudon, April 11, 1901.
