In a press-release headed 'Sweet Treats for the Slimmer" Weight Watchers provide several recipes from their 'Low Kilojoule Sweet Treats' Cookbook. Here we re-print one of the recipes using our locally produced earrots. Bake a cake? Why not? Just because you're on a diet doesn't mean you have to deny yourself. According to Weight Watchers, if you're a sensible slimmer, you don't have to swear off sweets forever but learn how to work one luscious serving at a time into your diet plan. This way your sweet-tooth satisfaction is guaranteed - as is your weight loss. FROSTED COCONUTCARROT LAYER CAKE 160 gms wholemeal flour 80 gms plain flour 1 1/2 tspns each B.P. and Baking Soda 1/2 cup honey 1/2 tspn gr. nutmeg 1/4 tspn each gr. cloves

and salt 2 c grated earrots 120 gms raisins 1 tspn each gr. cinnamon and mixed spice 1 tspn vanilla essence 1/4 c dessicated coconut (toasted) 6 tspns vegetable oil Orange Frosting (recipe follows) Preheat oven to 180°C. Spray two 23cm round cake pans with non-stick cooking spray. In large bowl, mix all ingredients except Orange Frosting and toasted coconut with 300ml water. Pour half of the batter evenly into each prepared cake pan. Bake about 25 minutes or until toothpick inserted in centre comes out clean. Cool cakes on racks while preparing Orange Frosting. To assemble cake, place one cooled layer on cake plate. Spread half of the Orange Frosting evenly to edges; top with second layer. Spread with the remaining frosting, leaving sides bare. Sprinkle top with toasted coconut. Makes 12 servings.

ORANGE FROSTING 540 gms drained tofu 7 tspns honey 1 tspn grated orange rind 1/4 tspn orange essence In food processor or blender, process in batches if necessary, all ingredients with 40ml water until smooth and creamy. Cover and refrigerate until ready to use.
