It is gratifying to note that Mr J. C. Cooper is turning his attention to the promotion of the bacon-curing industry. Before very long the Government may be expected to bring in some regulations that will compel the farmer and the manufacturer botn to take every precaution against the disposing by sale of imrnire or diseased meat. At present the methods are somewhat slipshod for dealing with <;he pigs bought for curing purposes, and though for the for t the sake of their own good name the curers endeavour to secnra good anil clean meat, there is id real surety in th se. If a bacon-cur-ing branch were estab'ishsd at the

new Waing«awa freezing works, the iarmers would not only get a good price for their pigs, hut a big trade might be Tbuilt up, both for bacon and mess pork, and these could both be exported at a profit. There would i be tbe other advantage to the farmers, namely, that whafever was tbe market rate would be secured to the producer. As things are at present, the pricea are, to a large extent, controlled, that is to say, the fixing of the price is altogether beyond the control of the farmer. If the Waingawa works can be utilised for the purpose of dealing in the porker and the bacuner, the farmers for many mile 3 round will derive a great benefit, and we would certainly counsel them to be on the alert and not allow the offered opportunity to

escape them. That there is money in pigs is very well known, and although the farmers have done fairly well out of this branch of their industry there remains a good deal to be done yet before the producer is permitted to fully participate in the profits that should accrue to raisers.
