LADIES' COLUMN.
RECIPES. Hop Beer. 1 large handful hops, 3 pints water, a few pieces whole ginger. Boil half an hour. Strain off on to 1-Jlb. sugar, add cold water to make 2 gallons. 1 cup yeast. Cooling- Fruit Medicine. 3,1b. figs, Jib. prunes, lib. treacle, loz. ground senna. Boil prunes till stones easily removed; cut up figs small. Boil fig's, prunes and treacle till about consistency of jam. While boiling stirr in ground senna, when finished. (Raisins may be added also.) Cucumber Relish. lib. apples, lilb. cucumber, o,lb. moist sugar, -J teaspoon cayenne, 1 pint vinegar, lib. onions, 2oz. salt. Cook apples in vinegar till soft. 'When cool add onions and cucumber cut small. Add other ingredients. Store in cool place. Spanish Cream. -ooz. packet gelatine, 1-i pints milk, 4 tablespoons soft white sugar, 3 eggs, i teaspoon essence lemon or other flavouring. Soak gelatine in milk for one hour. Pour into a saucepan and stir till just on boil. Add yolks of eggs beaten well with the sugar. Stir till it thickens. Take off fire. Add whites of eggs well beaten and the essence. Pour into a wet mould and turn out the following day. Sponge Crust for Stewed Fruit. li cups flour, 2 tablespoons butter, 1 tablespoon sugar, 2 teaspoons cream of tartar, 1 teaspoon soda, 1 large cup milk. (Or half these quantities.) Pour over boiling fruit and bake.
