Some prefer all black Tea, olhers a mixture of green; The most whole* somn is that mudc from black alone, - and if ,eno tenspoonfnl of tea bo . allowed for racli person besides an extra one for the teapot, nn in- . fusion of excellent strength may be obtained. The Tea should be . niudo in a bright metal teapot if possible, because bright substances retain iTTe bent longer thnn rough i ones ; s metnl teapot extracts all tlie strength in Ihe first infusion of Tea, learing none for Ihe Inslbrcwinp, nn | earthenware teapot being slower in i's notion upon the herb admits of a better Tea bring poured out at last. Then the walcr must not only have just boiled, but be in the Tery ad of boiling at the time it is pjured over the leaves, or no good Tea can be made. If the water bus stopped or gone off the boil one half minute, the Tea will. be weak an 4 tnsteless, for only water really at the boiling point will extract the qualities of tlie Tea, nud it should ftiitid from fifteen to twenty minutes before pouring ' out. The tenput should bo thoroughly dry and wnrin beforo putting the Tta in. In roaring the boiling water on to the Ten it is best only to hiilf fill the teapot, and in ten minutes to &dd the remainder. By this process t!io heat is kept up. When the infusion hns once been made it is useless to add any more Tea to Unit already in the tenpot. If more bo required, it is bolter to use a second tenpot, jug, or largo cup, titking enre to coTer closely, and pliice in the oven till fully infused, then it may be ndded to thnt already in Use tc-apot.
