ADULTERATION.
(To the Editor of tho Evening Sfar.)
Sib, —There has lately been a great ci'y out about milk, the terror of a Government officer inspecting and analysing the commodity, fining those caught adulterating the pure milk, and the vendors organizing associations for the protection of the public against the introduction of foreign substances, even water, and selling such as the real thing. But whoever heard of milk pure or erea adulterated driving people crazy, or being the indirect cause of such terrible deeds as that lately committed in our midst ? VVould it not be wisdom to include in the official business of public analyst, the duty of analysing all drinks publicly retailed, and not only be a protection to the unwary though thirsty soul, but a safeguard and warranty to the .class of people holding licenses and permits from the Government to sell any kind'of exhilarating or intoxicating drinks ? Tt is quite as important to prevent the sale of deleterious drinks as it is to prohibit the sale of • tinking flesh. —I am, &c., Fheemak.
