DAIRY INDUSTRY.
London, June 18. Mr Wilson, the . Victorian produce expert, has returned from a tour through France, Denmark and Sweden. He was greatly surprised at the scientific and mechanical perfection to which the manufacture of margai'iue is brought in those countries. The foundation is oil of arachide nuts, and as they sell at £45 per ton. He is sending samples of these nuts to see if they will grow in the mallee country of Victoria. He was also much astonished at the Sweedish system of preserving milk and cream by heating to" 170 degrees Fahr., and is sending two machines to make butter by this system, He has ascertained that scientists condemn the new system of cream fermentation. Mr Wilson has initiated a method of preserving cream fresh for months without using chemicals, and is sending samples. He highly approves of Laval’s butter-fat tester. Laval’s improved milking machine is not yet finished, and he has arranged that Victoria shall have the first perfect machine. Mr Wilson recommends beetgrowing in Victoria, and is sending samples of seed, with statistics of profits to be derived from the industry. He was greatly impressed with suitability of Sweedish emigrants for the mallee cquatry, He yegyets that the Qyieut
Company have refused to permit a trial of Negretti’s thermograph on board their steamers. The local Agricultural Society have again selected Higgins’ patent dairy salt apparatus, which was working at the Chester dairy show. Mr Wilson intends to pay a visit on Monday and report on it.
