CHEESE AND BUTTER FACTORIES.

A meeting of members representing country districts and those interested in dairying operations jvas held at Wellington on Monday morning. Mr O'Oallaghan, Chairman of the Stock Committee, occupied the chair. There were twenty-six members present. The real object of the meeting was to hear the information which Mr McCallum was willing to impart on the best systems of making cheese and butter in New Zealand, Mr McCallum is manager of the Edendale Cheese Factory, Southland, and under His"; management it has. been successful not only in the article produced, but.also in a financial sense, in speaking of the best system of cheese-making he was decidedly in favor of the Canadian Cheddar system as against the ordinary American, and recommended octagonal shaped*boxes for packing for export, and he had found that the only successful mode of export was to secure a proper cooling chamber .in a ship, but he could not tell the' exact temperature. He gave a great deal of useful information re the working of his own factory, re milking of cows, feeding of pigs and other matters, and showed that one farmer had realised £B lss 5d per c6w for forty cows last year, when milk was at 4d per gallon. A vote of ttanks was passed to Mr McCallum, who then retired. After a good deal of discussion, it was resolved—" That the meeting recommend that the' services of Mr McCallum be retained (temporarily) by the Government for the purpose of travelling round the country to instruct farmers and others in cheese and butter making pending the arrival of an expert from England, if it can be done at "a reasonable cost.'*
