THE FLEMINGTON CHEESE FACTORY
In an artiolo descriptive of the present condition of the Flemington Cheese Factory, the Press says:— Afc the time of actually commencing operations the Company sfarted vitb. a daily supply of about 400 gallons of milk The farmers soon saw the advantage of getting a cheque fo- pnduce a r their dairy c)w.« at the end of ea"h month, and instead of the supply of lui k fa li>>g off at the season when feed usna'ly become-* ie s plentiful, the 400 gallons per soon increased to 703 g illons, and afc the present time the daih supply is 800 gnllon* and the next season this will be btill further increared. Afc pro gent Mr Harding and his throe assistants aro turning out two tons f Che ldar cheese p*r wetk, and the to'a! amount in stock on Fri day last whs 18 'o s, of suable weights and shapes for both the London and coloniil markets. A little of the che-'se has already found its way into the local markets, and the quality and condition have been favourably cotnmcntfd by seroral acknowledged judges of cheese. A visit from the cheese nviUng department to the piggery shows a wide contra t but even here ev. vy little detail has been carried out with a view to the saving: of labor and miking the herd of 150 swine ai cjm/'or ableas their wal'owing natures will allow. The pigs have plenty of paddook ronm, and besides tin's they feed on the whey which comes from the faotory, and they seen* to thrive remarkably well on the generous treatment they receire. •
