DAIRY PRODUCE.

AT THE WINTER SHOW. A FINE DISPLAY. INCREASED ENTRIES. As is only to be expected In a district which is so essentially devoted to primary production, dairy produce has been given a prominent place at the winter show, which opened in the Coronation Hall yesterday, and is attractively displayed in the main hall. This year there are considerably increased entries in both butter and cheese, a feature being the success of Taranaki factories in the butter section, whilst in cheese the bulk of the prizes go to outside factories. The judging was, as usual, carried out by the officers' of the Grading Department, and in the course of their comments they remark that while the cheese exhibits do not present such a pleasing spectacle as usual, owing to the mould}’ condition of the majority staged, the quality Is on a par with former years. The majority gives evidence of care on the part of the makers, being well bandaged, but owing to the mould growth, points have been lost for' finish. The flavour in the majority is sound and clean, the winning exhibits being • very hard to separate, and it is pleasing to note that Taranaki factories have reached the prize money. A certain annount of toughness is shown in the body of some of the entries, but these are in the minority, the average being very fair. The society is ■to be congratulated on the greater interest taken this year, the greater number of entries indicating that the valuable trophies and prizes offered have not escaped the attention of the cheese-makers of the Dominion. In butter they remark that it is pleasing to note the number of entries exceed last year by twenty, the figures being 7G and 96 respectively. The quality upon the whole is of a high order, the majority of entries being especially so in this respect. Much more attention is necessary on the part of some managers in the matter of packing No. 2 class, which is taken from the stores showing much carelessness in this connection. Another matter which requires further attention on the part of a few managers is the faultiness of color, a few of the entries showing decided streakiness in this particular.
