MILK AS A FOOD.
APPRECIATION IN AMERICA. PROPAGANDA BY POSTER. America believes milk to be the most nutritious of all foods. In order to impress this on the people, vast advertising campaigns are continually in progress, pointing out to all that relatively milk is the best and cheapest of foods. Mr. H. A. Ward, manager of the Wellington city milk department, has brought back with him frbm the United States samples of the artistic colored posters which are to be found exhibited in almost every city, giving all kinds of information respecting the virtue of milk and dairy products. One of them states: “There are no substitutes for dairy produce—and healthy children.” Another says: “The most healthful nation is that which depends mostly on milk foods,” and posters commanding the people to “use more milk,” “use more butter,” and “use more cheese’’ serve to attract the eye and hold the attention. One ex-quisitely-colored poster has, as a centrepiece a. pound of cheese, from which radiate direction lines ending in “true to nature” colored -foods set out in dishes. This indicates that one pound of cheese contains as much nutriment as 2%H). of beefsteak, 6 4-51 b. of chicken, l%lb. of ham. 71b. of codfish, ■25 eggs, 3|lb. beans, 81b. peas, or 19 2-31 b. of tomatoes.
