Touching on, the necessity for further research work in connection with milk and its by-products at the opening of the Bell Block factory on Saturday, Mr. Grc-ville referred to the manufacture of sugar of milk. The process, lie said, was to evaporate 100 gallons of whey down to about 10 gallons, leaving a. treacly-looking substance. A hose was turned on to this and it was well washed. It had been proved that animals, if fed on sugar of milk, would die, whereas they would thrive on the treacly mass before it was hard. He had sent a. sample of this to Messrs. R. and W. Davidson, for analysis and researen. Gur Wai-trti-toi correspondent writes: Most dairy farmers recognise that the greater portion of butter-fat is contain' ed in the stripping of a cow', but it is probable that not many realise to wdiat extent this may be, and the resv.lt or a recent test of fifteen representative farms taken by a coW testing association ip lowa, showing 1.79 per cent, of butter-fai in the foremilk and 9.6 per cent, in the strippings, or the second milking (which is about five and a half times as much), should be a strong inducement to practice thorough milking, and to endeavor to get the last drop.
