BUTTER AND CHEESE. Fine at tfce WirrterShaw. Although the num'ber of entries, particularly in cheese, is I a decided improvement on that of previous years, yet i-oiisi.lerii.g the valuable prize list ther* should be still greater cpmpetition. A feature is the manner in which Taran>.ki factories have supported the society, especially in the cheese classes, in whic'> Mahoe and Bell Block and Cape Egmont Rre the I principal winners, Tuna, a rf-.w aspirant, 'gjso gaining prize honors. J)alefield and Belvedere, who were among; the winners last year, could only scor.< second and third places this year. Masterton, who were successful las'- year, and were only beaten in the points prize by. a narrow margin by Levin, have a great record this year, scoring fcur firsts a second and two points prizes Levin gained the other two prizes. Members of the dairy staff were judges, comprising Messrs. C C. Kobertson, C. Stevenson, W. Grant (cheese), F Thomson and N.. Fulton (butter).
JUDGES" COMMENTS. The judges remark that the quality of the butter was of a very high order, with the exception of a few entries which showed lack of freshness, and in a few cases irregularity of color as indicated by the score cards. The similarity of flavors and general manufacture of the prize-winners, made the work of judging a very difficult undertaking. With few exceptions, the competitors were to be congratulated upon the very high and even quality of the various butters manufactured. They were indeed a credit to the makers, and would hold their own against all comers. ! While the comparaitvely small number, l of cheese exhibits was rather disappoint|ing, in view of the generous prize list offered by the Society, the quality on ! the whole was very satisfactory. With the exception of one or two entries, thej'body and texture showed a marked degree of uniformity, indicating great care on the part of the makers. As regards flavor, the same standard .had not been reached, suggesting that fie raw material was at fault. The finish had in most instances been carefully supervised, although several entries were not satisfactory in this respect. The success of Taranaki factories on this occasion should eneotrrage local makers to support the Society's efforts, in a more enthusiastic manner.
