DRIED MILK AND SUGAR OF MILK.

TOED-- FOE;. CAUTIOKSMa^KED*! At; tlie: - annnali meetings o£- tHov.':MangoieC Dairy Company om JMday Mr A. Morton briefly referred to the-, ques- . turn, of drietl aniSc and' sugar of milk, of which. a. good deal had been heard lately.. Regarding-dried milk tho- whole information.' vailable had been,, ho. said,, put into, print and 110. doubt, bad been read by all.. A® far as Taraaiakii was: concerned, a. committee had been set. up. to make full' enquiries into- the- position and report at a further meeting; aa. to. the proßpects of the industry. To- go in for the manufacture of dried milk would prove an expensivo matter and could only lie undertaken- within certain limits. Tlia factory must be in a position where a railway siding- could bo run into it, because fuel would, be required in such quantities that, it would' not pay to handle otherwise.. The Same applied to the output,, which wa® bulky to handle, beings butter and dried milk. The factory also required to be. in a position where it could draw the supply of 3QOO cow 3. It would require a capital of £30,000' ui respect of each factory. Tho matter therefore required careful consideration. Whether tho prices would be maintained after the war would need to be carefully weighed), so that thoso who went in for its manufacture whilst the. cost of installing the plant was so high! would! receive adequate remuneration. .There could be no rushing into it, because to-day it. would be impossible to procure , the necessary plant and machinery, and thosa who desired to undertake its manufacture would likely . havo to wait until more settled conditions prevailed. The manufacture of sugar of milk was also an important one to consider. It applied both to cheese factories and butter factories where casein was manufactured, because it was made from whey. Tho prices paid to day for sugar of milk were so high that if there was a likelihood of them continuing sugar of milk would be a better proposition than dried milk. How long would thesis prices continue and would it be prudent to undertake the manufacture of dried milk or sugar of milk on an inflated market?, The plant for the manufacture of sugar of milk would not be as expensive as that for dried milk, nor was it -so necessary that It should be near a railway, because t&e consumption of fuel was not nearly so g#eat. However, nothing was likely to materialise for some t nue. and by that time the market might be normal and not Bueh as to warrant them installing the plants. He pointed out that the manufacture of either would! necessitate knocking the calves on the head, whilst they would also be unable.to rear pigs, as both the whey and skim milk were evaporated. , They therefore had to consider whether it would be a payable proposition from that point of viett also, whilst undoubtedly tlie price of stock and pigs would become very high.
