ELTHAM DAIRY COMPANY MEETING.

ANNUAL BALANCE-SHEET. The balance-sheet of the Eltham Cooperative Dairy Factory Co., Ltd., shows the great strides the dairy in' dustry is making. The first year's turnover of this company (26 years ago) was'some £4000; last year the figures were £182,000. Other receipts were for rennet and royalty £l7B, and cool storage ±T/9 Owing to war prices and shortages, some of the items on the expenditure side appear heavy; for instance, tne cost of rennet and pepsin (£4484) exceeded the company's first year's turnover. Suppliers have been paid £122,070 as advances on milk, ap. projjimating Is 6d per lb, while a further sum of nearly 4M can be paid out of the surplus. The total milk received was 42,793,9181b, and cream received was 59,8161b, from which 18G3J tons of cheese and 34 tons 15$ cwt If buttei was made. Whey butter manufaeiuroo was 48 tons llcwt. The average tesl for milk received for butter-makin" was 3.79, and for cheese 3.74. Tnc benefit of the new storing room has been very evident, and its value will be more apparent before the war doses.
