To the Editor. Sir,—lt is some three years since I advocated the manufacture of rennet in Taranaki, at a general meeting of the Kaupokonui Dairy Co. The subject matte;- was pooh-poohed then by the chairman (Mi. Powdrell). I am pleased to see that he is my way of thinking now. ft has always appeared to be a waste in not making use of this part of the calf. In this country we throw away ai ore than people live on in other lands. When hunting up data on the rennet subject some few years ago, I dropped across a. stranger, who informed me that one kind of rennet was made from a shrub. If this is correct, we have the animal rennet aiid the vegetable ditto. Could any of your readers make public if there is such a thing as a bush or vegetable which will produce rennet? I know there are two kinds of coloring used for cheese. Experts say the best is the vegetable one, which is preferable to the chemical. I have been informed that there is a man who hails from Switzerland living near Ifawera who maintains that lie can manufacture rennet without using calf veils. If it is a chemical- process lie uses care will have to be taken to see it does not produce inferior cheese.—l am, etc., D.J.IL
