RENNET.
(To fclie Editor.) As it is anticipated that rennet lequired for the coining season will not be obtainable from the usual source, it behoves those interested to bo up and doing something to ensure a sufficient supply ,|f this essential article. At thf present time much is being said written about trade within the Empire. Here we have a case in point. To tlhe lay mind it fjeems passing strange that the success of one of our niost important industries depends on Russian economy in preserving calf's veils to be sent to Denmark, from whence we draw our supply of rennet, while here on the spot veils are thrown away by the thousand. It is thouglht the greatest obstacle in the way of making rennet locally will be to obtain veils in proper condition. There seems to be an impression that farmers would not take the troulble to preserve them. The trouble is tlhat mo3t farmers are entirely ignorant as to their proper treatment for commercial purposes. In this respect the Agricultural Department could render great service by issuing a leaflet giving advice on tile matter. There seems to be no Teason why a rennet factory could not be established in 'Paranaki, with all cheese factories as receiving stations. Tlhere should be no difficulty in obtaining a sufficient quantity of raw material to meet requirements. As it is suggested to hold a meeting of representatives of all cheese factories in the Dominion at Palmerston North during show week to discuss this matter, would it not be advisable for representatives of cheese factories throughout Taranaki to meet in New Plymouth during show week to discuss details and adopt some definite line of action?—l am, etc., PROGRESS.
