To the Editor. Sir, —In your issue of the 21st inst. appeared a letter signed "Factory Manager." I wonder if "Factory Manager" is just a nom-de-pl|ime or really descriptive of his calling? I think it must be the former, as any factory manager knows that none but the strong and healthy men can stand the exhaustive work of cheese manufacturing. One could not place it in the catalogue of easy jobs, and I should say a man who was not up to the mark in health and strength would not be looking for a job like cheese "walloping," In nine cases out of ten a man who hid been classed by the military authorities as "unfit for service" would come under the same heading in regard to working in a cheese factory. Another point. Say a man was turned down because he was suffering from some malignant disease. Would it be the correct thing to place that man in a position where he would be handling food in which the germs of Ms particular disease would have a good opportunity of spreading?—l am, etc., READER.
