The manager gave his opinion in no uncertain terms, and there can he no doubt that his argument iw a perfectly .sound one. He said that if lie had his'way lie would not allow any hot water to he taken away from the factory, but would insist that every supplier should have proper appliances at his own farm for providing ample boiling water to thoroughly clean every milk can aa soon as it was returned home from the factory. It was simply a farce for a farmer to cart a canful of hot water from the factory three or four miles to liis home, and then imagine that he wa» properly scalding out his cans. It might not be so bad in the case of suppliers living close to the factory, but with others it wais worse than useless, it was essential in the dairy industry that everything should be kept scrupulously clean, and factory managers whose reputation depended on the quality of the cheese or butter they produce, could not 1» blamed if they spoke out plainly and frankly against any practice which might tend to prejudice the quality of the milk brought to the factory.
